Enjoy This Delicious Cookie Recipe Made with Vive Energy Spice Drink Mix

We walked in to the office this week to find these delicious cookies made by Karen in the front office from Vive! Energy Spice drink mix!  They are low calorie and wonderfully nutritious.  Too good to be true but really, you will be pleasantly surprised at how yummy they are.  Your family will gobble them up and you’ll be doing them a favor.

Ingredients
1/2 cup coconut oil softened
2 tsp Vanilla Extract
2-1/4 cups of Whole Wheat Flour
1/2 tsp. baking soda ( make it a little rounded)
4 scoops of Vive Energy Spice mix
2 lovely large eggs
1tbs goat or almond yogurt
Truvia for sweetnessNutrition data

DirectionsMeasure your flour , baking soda into bowl blend then add the Vive Energy Spice Mix. Blend
Add your Vanilla , coconut oil and eggs (you can use ground flax seed as a binder for a vegan cookie). Add Truvia and  blend ,tasting  your dough until it is your desired sweetness.
Now take your hands and mix this dough until fully blended if dough seems a little dry add some yogurt (soy or almond if you prefer for a vegan cookie) if needed, just a touch , such as a teaspoon at a time. Do not add much as this is a dense dough .
Place bowl in refrigerator to chill, about 15 to 20 minutes.
Take enough cookie dough in your hands to form a small ball, place on cookie sheet or any flat surface baking pan. Take your fingers and press one way then the other to flatten the dough so it will cookie evenly, Not too thin or too fat. The size of your cookie is your choice.
This is not a roll out dough, it will make the dough too dry if you do so.
Bake at 350 about 10 minutes, keep an eye on them as different sized require different time to bake.
